Al-Kabīr is one of the 99 most beautiful names of Allah (al-Asma al-Husna) and means "The Most Great". Everything else is small beside Him, which is what Allahu akbar in every prayer expresses.

Al-Kabīr in the Quran
ذَٰلِكَ بِأَنَّ ٱللَّهَ هُوَ ٱلۡحَقُّ وَأَنَّ مَا يَدۡعُونَ مِن دُونِهِۦ هُوَ ٱلۡبَٰطِلُ وَأَنَّ ٱللَّهَ هُوَ ٱلۡعَلِيُّ ٱلۡكَبِيرُ ﴿٦٢﴾
Thalika bianna Allaha huwa alhaqqu waanna ma yadʿoona min doonihi huwa albatilu waanna Allaha huwa alʿaliyyu alkabeeru
That is because Allah is the Truth, and that which they call upon other than Him is falsehood, and because Allah is the Most High, the Grand

Allah says: "And to Allah belong the best names, so invoke Him by them. And leave [the company of] those who practice deviation concerning His names. They will be recompensed for what they have been doing" (Quran 7:180). In supplication you call upon Allah by the name that suits your need. For example: Yā Kabīr.
